This one is a real treat, one that I have been enjoying so much, I almost forgot about sharing it with you all!
It is such a lovely drink on its own or mixed, as well as the leftover fruit making a great addition to Piña Coladas, it's great in every way.....well, we like it, and hope you do too!
Make sure you pick a ripe and juicy pineapple as it's flavour will seep in to the rum, whereas a firm, bitter pineapple isn't going to make anything taste delicious, is it?
Right, let's get this party started...
You'll Need:
Fresh Pineapple - Use around half of the whole fruit.
500ml Gold Rum (I used Isla Ñ's Boutique Gold Rum, and this worked a lot better than white rum I tried a second time round, but both infusions are still delicious if the fruit is flavourful!)
You're also going to need:
Sharp knife and Chopping Board
An Air Tight Bottle/ Jar
An Air Tight Bottle/ Jar
A Fine Mesh Sieve / Coffee Filter Papers
7 Days Infusing Time
Method of Madness

The easiest way to do this is to remove the top and bottom, and then take away all edges, a slice at a time.
Alternatively, you might have a gadget to do all of this for you, and if you do, be sure to keep the shell to serve drinks in afterwards, for a real tropical escape!

Once you have the fruit out, quarter it top to bottom, and remove the firm core from each quarter. Now, chop two of the quarters in to small cubes around 1cm by 1cm - this gives the fruit the largest overall surface area for quicker, more effective infusing, and also makes for easy removal from all bottle sizes.
Add the chopped pineapple to your infusing bottle, and pour over the rum.
Seal, and leave to infuse for a week in a cool place, away from direct sunlight.
Party Morning - Strain and separate the pineapple pieces.
Bottle up the rum ready to drink later!

Pineapple Mojito
This is, by far, my favourite use for this infusion, and we actually used up the whole of the first batch just on this drink alone, so we had to immediately put another batch on in order to give you guys some other options!
For Each Glass, you'll need:
60ml Pineapple Infused Rum
3tsp Sugar
1 Lime, cut in to six wedges
8 Mint Leaves
Crushed Ice
Grab a glass, or a jar....we loved using jars!!
Add the sugar to the glass, squeeze over four lime wedges, tear the mint leaves and add them to the glass. The lime juice will start to dissolve the sugar, but you can help it along by muddling it all together, until the sugar fully dissolves.
Half fill the glass with crushed ice, and give it all a good mix, then top with more crushed ice.
Pour over the Pineapple Infused Rum, the remaining lime wedges, gently mix, and serve!
Piña Colada
Knowing how much rum had soaked in to the
and so I decided to blend the pieces straight in to a Piña Colada.
Perfect.....if you like them strong! These are definitely a more manly take on the traditional Piña Colada!
Makes 2 Large Glasses:
Half a pineapple, diced, and soaked in rum
30ml Coconut Rum
5 Scoops of Vanilla (or coconut) Ice Cream
Splash of Milk
Grab the blender, add all of the ingredients, fill a glass, and enjoy!
Simple Serves - Add a couple of shots to an ice-filled glass and try these mixers:
- Try with orange and mango juice
- A lighter, more refreshing option is with ginger ale and a wedge of lime.
- Or mix a Pineapple rum Sour, with fresh lemon juice, sugar and ice, it's strong, but delicious!
