This drink has been created for those "I NEED SUGAR" moments, or after those long days when you need a cross between a mug-hug and an alcoholic kick, or if you're like me, you'll simply class this as one of your five-a-day!
Back in my bartending days, we used to layer up to five different liquor layers to create that amazing, most magical, "wow" from the customers. BUT we'd have to pass them a straw to mix the whole thing in to a dirty-paint-water concoction, and watch all my skill and effort vanish in an instant! I used to love those moments, they are the true rewards of bartending!
For some strange reason, I recently decided to revisit those layering moments after accepting these complimentary colours would be less painful to watch as these were mixed together later on.
Before we go anywhere near those layers, we need to make the Sweet Banana Rum!
Ingredients
(We had Ron Caney freshly delivered from Cuba to use, YUM!!)
125g Foam Banana Sweets
(I used 200g bag on a "two for the drink, one for me" basis)
You're also going to need:
An Air Tight Bottle/ Jar
A Fine Mesh Sieve / Coffee Filter Papers
7 Days Infusing Time
Method of Madness
Another super easy infusion - Pay attention!
Take bananas out of bag, sample many, when you are satisfied that the bananas are not poisonous, add to the jar and pour over the rum.
Leave to infuse for the week, with the classic daily swirl-shake, and you will soon see the bananas growing in size, softening, and eventually the rum will turn yellow!
Party Morning - Now this one is a real party pleaser because the bananas are now basically yellow, worm-like, shots of rum....mmmm tasty! So of course, everyone at the party has to do a few of these, although playing Chubby Bunny with them is not recommended!!
Separate the bananas from the rum, bottle up the rum for later, and if you fancy that extra amuse-bouche then hold on to the bananas in their own airtight container.
Et voilà!
Now for the Glass of Banoffee!
- First up, pour 35ml of Sweet Banana Infused Rum in to a tall glass.
- Next, take a long spoon or bartending spoon and gently balance this on top of the rum.
- Slowly, pour 35ml of Toffoc (or another Toffee Vodka) on to the spoon, and if you've got a steady hand, you'll see these floating on top of each other!
- Again, steady the spoon on top of the toffee vodka, and now top with chilled cream soda.
- Finish with a whipped cream topping, cinnamon dusting, and a couple of sliced bananas!
- DIG IN!!
